4 Easy Recipes for Your Next Potluck

Summer has just begun, COVID seems to be winding down and outdoor activities are at an all time high. Hanging out with friends finally feels safe and making sure you have an easy dish to bring to your next potluck or picnic is essential. Whether it’s a main dish, side dish or refreshing drink here are a few options that will take little or no time to make. 

Salpicón De Pollo 

Ingredients:

In a Saucepan add water until two chicken breasts are fully covered. Salt the water and boil.

While your breasts are boiling, cut onion into thin strips, dice tomato, mince cilantro and cut romaine into ribbon pieces. Add to a large bowl with the Sour Cream, Mayo and Oregano, saving some onion for garnish. 

Once chicken is cooked and cooled, shred the chicken and add it into your mixture. Mix everything together and add salt & pepper to taste. 

Add crumbled queso fresco to cover the top of the dish and cut avocado into slivers and also add that to the top with the remaining red onion. 

To serve, layer on top of a tostada, add your favorite salsa and enjoy. 

Spiked Peach Iced Tea 

One of the simplest drinks that I can recommend for a potluck is only two ingredients. Peach iced tea with Malibu Rum. Add 2oz of Malibu Rum to an 8oz pour of peach iced tea with ice. Add peach slices for a fancy finish. 

Bring something unique and delicious without spending too much time in the kitchen or making a huge mess. All ingredients can be conveniently found at Trader Joe’s 

 

 

Cold Lentil Salad

Slice the cucumbers lengthwise into three pieces. Flip flat side down and slice into strips, then cut down the strips to create small cubes. 

In a large bowl combine the entire package of lentils, cucumbers, carrots and celery from the Mirepoix package. Only use about half of the onions from the Mirepoix package unless you want a stronger taste. Add vinegar, oil, salt and pepper. Toss to combine. 

For best results make a day ahead to let the ingredients absorb together. 

Optional adds: Avocado, cumin, green onions, fresh cilantro, or fresh parsley.

Makeshift Cucumber Margarita 

Serves 2:

In a glass pitcher or a metal shaker muddle sliced cucumber, tequila, and lime juice. Add sparkling limeade and ½ cup of crushed ice.Stir (don’t shake) vigorously, being careful not to let carbonation overflow. Add more crushed ice to two glasses (8oz or larger). Pour drink contents through a strainer. Garnish with cucumber and lime slices. 

 

 

Next time you make it out to a potluck, BBQ or picnic you won’t have to pull up empty handed. The recipes will take little or no time and will leave you with more time to enjoy your summer.
