30 Minute Value Meals: cucumber salad

Since the new year, I’ve been trying to find simple meals to help with losing weight and to  feel better. Being on a budget, I’ve aimed for value meals that can be prepared in 30 minutes or less. I’ve begun eating more of a plant-based nutrition plan, although I still eat chicken and fish and occasionally a hamburger if I’m hungry for it. It’s all about proportions and eating in moderation. Eating what makes you happy is also good so long as you do it right. I hope this  will help somebody who is looking for simple ideas for preparation.

For lunch today I made a cucumber salad. 

I bought two new peeler‘s by KitchenAid, the first one, a regular peeler, and the second one a serrated peeler. I used the serrated peeler to shave the cucumber into ribbons, and then also the carrot. I took two pinky size pieces of ginger, and also shaved those down into small pieces thinly sliced. 

I added some lemon zest, some feta crumbles, some torn mint leaves, two apple slices diced into small pieces, some red pepper flakes and some almond slices.

Then I made a simple vinaigrette using 1 tablespoon and a half of balsamic vinegar, some salt and pepper, a tablespoon and a half of Nathan‘s spicy brown mustard, a sprinkle of Cayenne pepper and some garlic powder, And lastly some soy sauce to tone down the ginger. 

I mixed it all together and It was done. It’s a pretty simple meal that can be assembled within 15 minutes.  

Ingredients:

One cucumber, one carrot, two pinky sized pieces ginger.

Lemon zest, feta crumbles, torn mint leaves, two apple slices, some sliced almond, red pepper flakes.

Vinaigrette: 

1 ½ T balsamic vinegar, 1 ½ T Nathan’s Spicy Brown Mustard, cayenne pepper, garlic powder, soy sauce.
