Hankering for something sweet late at night, I rummaged through the kitchen. There were no cookies in sight! No forgotten ice cream in the freezer waiting to be rediscovered. No random chocolate leftovers from Halloween. Finally, I happened upon some Dark Chocolate Covered Marshmallows hiding in the cupboard. But these didn’t seem like they were going to hit the spot.
Suddenly an idea came to me, fueled by the desire to eat something tremendous that didn’t require too much effort. Euro S’mores! Not quite American S’mores, but more reminiscent of a European child’s breakfast or afternoon snack.
Recipe makes one piece, but make as many as your heart and belly desire:
INGREDIENTS
1 slice of Trader Joe’s Cinnamon Croissant Loaf
1 heaping tablespoon Speculoos Cookie Butter*
3 – 4 Trader Joe’s Dark Chocolate Covered Marshmallows
Turn on oven broiler to low and preheat oven. Spread the Cookie Butter on a slice of Cinnamon Croissant Loaf. Top with up to four Chocolate Covered Marshmallows and place on a cookie sheet. Place in the oven for one minute. Keep an eye on the toast as oven temperatures may vary. If you don’t have a low setting on your broiler you may want to remove toast sooner. Remove from the oven and let cool slightly.

*Cookie Butter can also be replaced with Peanut Butter or Almond Butter for an equally delicious experience
